to the Fichtenhof Guesthouse & Restaurant in Gfrill near Salurn

The Fichtenhof Restaurant was founded in 1964 by Josef and Traudl Pardatscher as a small inn, when they noticed that more and more hikers were exploring the surrounding forests. The ancient farmhouse lies at about 1,300 metres above sea level, in the peaceful atmosphere of the mountain village of Gfrill.

With the support of all family members, the restaurant developed over the years and its excellent cuisine became increasingly well known, also thanks to the establishment of the Trudner Horn Nature Park in 1980. Typical South Tyrolean dishes, homemade and prepared with local ingredients, can be enjoyed here among wide meadows and quiet forests.

A strong connection to the local area has always characterised the family business, which relies on a network of local and environmentally conscious suppliers and producers. This remains the key to creating flavourful dishes and reflects the deep respect for animals and nature.

A walk in the forest does you good. Our grandparents already knew that. Japanese researchers have now shown why: forest air contains many bioactive substances, including terpenes. Breathing in these terpenes strengthens the immune system, lowers blood pressure and blood sugar levels, and activates the parasympathetic nervous system, the body’s resting nerve. Forest bathing, known in Japanese as “Shinrin Yoku”, makes use of these healing properties. Via ferrata climbing is becoming increasingly popular in the Alps as a leisure sport. One reason is that via ferrata routes can often be undertaken alone by experienced hikers, much like normal mountain hikes. Unlike alpine climbing, the technical difficulty is usually moderate and therefore accessible to many outdoor enthusiasts. The Fichtenhof is an ideal starting point for reaching some of the best-known via ferrata routes within about an hour, including those around Arco and Riva. All routes are clearly signposted and properly equipped to ensure safety, while the summits reward climbers with magnificent panoramic views.

Various forest roads and paths invite you to choose a new hiking destination every day, from the “Hornalm” to the “Heiligen See”, the “Königswiese” or the “Sauchsattel”. Located in the heart of the Trudner Horn Nature Park, nature lovers will find plenty to enjoy. Covering an area of 6,660 hectares, it features beautiful larch meadows, raised bogs with rare plants, forests, ponds, clearings and rock faces, stretching from the valley floor of the Etsch Valley (224 m) up to the Weißhorn (2,317 m). The South Tyrolean Wine Road runs through a gentle hilly landscape and 16 villages, passing wineries, castles, palaces and historic manor houses. The picturesque area between Nals and Salorno has long been shaped by vineyards. As early as 2,500 years ago, the Rhaetians cultivated vines here. Today, more than 4,000 hectares of vineyards are cultivated along the South Tyrolean Wine Road, which is the oldest wine road in Italy. Salorno Cittaslow

Salorno Cittaslow In October 2015, Salorno joined the international Cittaslow network. In doing so, the “three-level town” identified itself even more strongly with its territory: with the terraced landscape stretching from Salorno to Buchholz, with the Wine Road, with the network of paths in the Trudner Horn Nature Park, with the impressive waterfall that shaped the cone on which the town stands, with the ecological gems of its biotopes, and with its close relationship to the River Etsch and the Haderburg Castle that overlooks it from above. It is also reflected in the friendliness and hospitality of its people and in the products of a typical agriculture of great importance. Salorno is the second-largest white wine producing municipality in the province of Bolzano, closely linked to a genuine local gastronomy that expresses the character of the region.
